Equipment: 
Note: For best results the bowl and whip should be grease free and as cold as possible. Water needs to be Ice cold.
Mixer: 4 Speed upright with Whip attachment.


Preparations: 

1. Place the Ice Cold water into the mixing bowl, add the Angel Food Cake mix.

2. Mix for 1 minute on 1st speed and 7-8 minutes on 3rd speed or to the following specific gravity. .60-.67, 151g –163g using a Robin Hood specific gravity cup.

3. Deposit into angel cake pans (1/2 fill) or paper lined muffin pan (1/2 fill).


Bake at 190°C (375°F) in a conventional reel oven or 177°C (350°F) in a rack oven for approximately 30 minutes depending on size.

When cool, cover the Angel cake with Raspberry flavoured glaze.
