Equipment: 
Mixer: 4 Speed upright with paddle attachment.

Preparations: 

1. Combine 2.5kg (5lb 8oz) water, 3.3kg (7lb 4oz) Vegetable oil and 1.5kg (3lb 6oz) whole egg in the mixing bowl. Add the NSA brownie base.

2. Mix for 2 minutes on 2nd speed.

3. Add the rest of the water 2.5kg (5lb 8oz) over 1 minute on 1st speed. Scrape the bowl and paddle. Mix a further 1-minute on 1st speed.


Add the Cherries and Walnuts in the last 20 seconds of mixing.

Deposit (approximately ½ full) Brownie batter into paper lined or lightly greased 5cm (2”) deep baking pan.

Bake at 190°C (375°F) in a conventional reel oven or 177°C (350°F) in a rack oven for approximately 30 minutes depending on size.
