Equipment: 
Mixer: 4 Speed upright with a whip attachment.

Preparations: 

1. Place the cold water into the mixing bowl and add the Angel cake mix.

2. Mix for 1 minute on low speed to incorporate and 7-8 minutes on 3rd speed.


Scale into Angel Cake pans to approximately half full.

For the individual portions, deposit half full in a paper lined jumbo muffin pan.

Bake at 190°C (370°F) in a conventional reel oven or in a rack oven at 178°C (350°F) for approximately 30 minutes depending on size.

NOTE: As some of the ingredients have a tendency to settle at the bottom of the bag, we do not recommend that smaller batches of the formula be made. However, if smaller batches are produced, the bag needs to be flipped over several times and shaken up before use.
