Equipment: 
Mixer: 4-speed upright with a hook attachment.

Preparations: 

1. Place the bread mix and instant yeast into mixing bowl, blend for 1 minute on low speed.

2. Add the water, mix on low speed for 1 minute, then mix 8-10 minutes on 2nd speed or until dough is developed.


Dough temperature 26-28° C (80-82°F)

Bulk Fermentation time: 15 minutes.

Scale at 540 grams (19oz) round. Rest 15 minutes.

Mould dough pieces. Moisten; roll in oats or a blend of your favourite topping. Place into bread pans or on baking trays.

Proof for approximately 60 minutes.

Remove from proofer, let stand for 5 minutes, cut on top before baking.

Bake at 204 °C (400°F) for 25-30 minutes. (Bake with steam if possible).
