Equipment: 
Mixer Type: 3-speed upright with a paddle attachment.
If mixing by hand, place water and muffin mix into mixing bowl and mix well for 2 minutes.


Preparations: 

1.Place the muffin mix and water into the bowl. Mix on 1st speed for 1 minute.

2.Scrape bowl and paddle; mix a further 2 minutes on 2nd speed.

3.Add the Raisins for 30 seconds on 1st speed.


Batter Temperature: 22º C (72º F).

Rest Time: 10 minutes

Deposit into lightly greased or paper lined muffin tins.

Bake at 204º C (400ºF) in a conventional oven or 162ºC (325ºF) in a convection oven for approximately 25 Minutes for a 112g (4oz) Muffin
