Equipment: 
4 speed mixer with paddle attachment.

Preparations: 

1. Place water, then mix into mixing bowl. Mix 1 minute 1st speed, then 1 minute 3rd speed.

2. Scale dough at 3750gr (8lb 12oz) and form into heads. Refrigerate for a minimum of 2 hrs.

3. Pin out to 1/4 inch thick in rectangular shape on floured bench.

4. Spread soft margarine over surface leaving one inch (2 1/2 cm) on the bottom bare.

5. Spread cinnamon sugar over margarine, then scrape off excess sugar of with a plastic scraper.

6. Roll up from top to bottom insuring to achieve a tight roll. Egg wash one inch bare section to seal roll.

7. Cut into 2 oz (56 grams) pieces and place 4 by 5 on papered baking tray. Egg wash if desired. Let rest for 15 minutes prior to baking.


Bake Time and temperature: 193ºC (380ºF) in a rack oven for approximately 10 to 12 minutes.

CINNAMON SUGAR MIXTURE:

Brown Sugar: 5kg (2lb 4oz)

Cinnamon: 250g (9oz)

Vegetable Oil: 200g (7 oz)

Mix above ingredients in a 4 speed Hobart mixer for 2 to 3 minutes in 2nd speed.
