Equipment: 
4 speed mixer with hook attachment.

Preparations: 

1. Place all ingredients except for the Raisins and cranberries in mixing bowl.

2. Mix for 2 minutes on 1st, then 10 minutes on 2nd speed.

3. Add raisins and cranberries and mix for approx. 4 minutes on 1st speed, or until fully incorporated.


Dough temperature: 24C (80F).

Let rest in bulk for 15 minutes. Scale at desired weight, round and rest for 10 minutes.

Mould loaves and place in bread pans.

Proof Time: Approximately 45 to 60 minutes.

Bake Temperature and Time: In a rack oven at 204°C (400°F) for approximately 30 minutes.
