Equipment: 
Mixer: 4 Speed upright with a paddle attachment.

Preparations: 

1. Stir the eggs, oil and water together in a container.

2. Place the cake base in a mixing bowl. Add ½ of the liquid while mixing on low speed, then mix 2 minutes on 3rd speed.

3. Add the remaining liquid while mixing on low speed. Stop and scrape the bowl and paddle. Continue mixing on low speed for 2 minutes.

4. Add 2kg (4lb 6oz) of sliced apple and 84g (3oz) of cinnamon to the bowl, make a swirl/marble affect.


Scaling: Fill any lightly greased baking pan to ½ full. Top with cinnamon streusel.

Bake at 190°C (375°F) in a conventional reel oven or 178°C (350°F) in a rack oven for approximately 30 minutes depending on size.

When cool, garnish with coffee flavoured string icing.
